2019's first whisky of the month - The Deveron 12 Years

Thank you to Member Rob Woodford who brought his friend Matthew Swinney along to review our first Whisky Club tipple for 2019 - The Deveron Highland single malt 12 year old.

 

Rob’s review:

Colour: Autumn leaves in Connecticut

Nose: Initially searing then rapidly softening

Palate: Fulsome, well balanced with lingering butter

Water: Moderate with water

Finish: Unmistakeable but not overbearing

 

Matthew’s review:

Colour: An Autumn evening (soft amber)

Nose: Unferocious

Palate: Frontal sparkle but synonymous dive to back of throat

Water: Bulbous, light

Finish: Instant cockle warmer, upward journey

 

From the distiller:

This was another whisky released in 2015 by John Dewar & Sons as part of their ‘Last Great Malts of Scotland’ campaign. It is a Highland whisky produced at the MacDuff distillery on the eastern shore of the Deveron River. Distilled in pot stills from 100% malted barley, then aged in barrels.

 

TASTING NOTES:

Nose: Sweet baking spice, toffee apples and ginger.

Palate: A core of butterscotch with waxy malt and apple pie.

Finish: Wood spice, vanilla and soft oakiness.

Overall: A new-look core expression for a single malt that's rightly getting more attention.

Michelle Martin is an Australian former professional squash player who was one of the game's leading players in the 1990's. She was ranked number one in the world from 1993 to 1996 and again in 1998 and 1999, and won three World Open titles, six British Open titles and seven Australian Open titles, plus 2 gold medals at the 1998 Kuala Lumpur Commonwealth Games

We are pleased to announce all courses have been locked in for the new year:

Each year our cyclists venture to Orange for their annual ‘Tour de Orange’ weekend of cycling. This year we invite other sub clubs to join in the fun.

Pre-plan your 2019 event now!

We’ve had an incredible year showcasing the refreshed Members Bar and Dining Room space as well as trial testing our shiny new audio visual screens and tools. The new AV system gives us the opportunity to host coinciding events in both the Members Bar and Dining Room areas, using both AV screens and microphones at the same time without disruption to either event.

 

It’s exciting to see Members and clients already locking in events for 2019 to ensure they secure the Clubhouse space and date of preference for their special occasion or work function.

 

Members have gathered both loved ones and peers inside the Clubhouse walls to celebrate an array of events; from 21st’s to 80th birthday parties, 40/50/60 year school reunions, engagement parties, pre wedding lunches, anniversaries, Christmas parties and much more.

 

One Member who recently organised and celebrated a hugely successful 40yr school reunion in which we managed to squeeze 110 guests into the dining room to celebrate the occasion, recaps his experience below:

 

"It was a wonderful occasion and I have received so many texts, emails and phone calls of thanks. The reunion attendances suggest that it must have been one of the best.

 

The event was extraordinary - the support I received from Tattersalls was amazing. What a dependable organisation. The Club is extraordinary and very special to me but as we know it’s the people that make the Club.

 

I feel that I can communicate telepathically with Mario and Esmond but the reality is that they are always one step ahead of me. Problems just disappear with those two around.

 

The final result of the night was that there was so much warmth and goodwill in the room and the Club created the opportunity to host us and keep us together. Many people left that night with huge smiles on their faces and great memories, and the staff at Tattersalls should take great pride in creating that environment and supporting us with exceptional food, drinks and best of all, service.

A 70's Staple, the Prawn Cocktail, Re-imagined

For 30 years the prawn cocktail reigned supreme. While its glamour may have faded, it still has plenty of appeal. The prawn cocktail is hip, and it's back.

 

There have been many attempts at fancy bars and restaurants to cheer up the prawn cocktail with Thai spices, fennel fronds, chopped tomato and fresh herbs, but Chefs Nate and Danny have stuck with tradition and used a mixture of big meaty prawns and smaller sweet ones for texture and flavour; and at its simplest, the Marie Rose sauce, which is a mix of ketchup and mayonnaise. But Worcestershire sauce, tabasco, lemon juice, brandy and sherry all have their place in this late 20th century classic.

 

To celebrate the start of summer, Tattersalls Club is bringing you the Prawn Cocktail for the month of December, to be matched with our other cocktail, yes, the alcoholic kind!

 

Our twisted gin cocktail is a one-way salsa dance into the early hours of the summer morning. The tasty mix of shaken gin, blended with sweet ginger juice, lime and ginger beer is an ideal accompaniment to slate any thirst. Quick and simple - a perfect pick me up under the warmth of the summer sun.

 

This summer, we found no finer beverage to lift us than our Gin Gin Mule cocktail. With just a handful of ingredients, this is a refreshing drink that evokes summer. Next time you're in the Club, try our December cocktail and raise your glass & nod approval to the sun!

December's Whisky of the Month - Clyde May's

This month's whisky, Clyde Mays Alabama style whisky, is reviewed by Members Rob and Rick below. Thank you both for your time in being our latest reviewers.

 

Colour:

Rob: A thin golden-brown with a suggestion of orange. Takes on a transparent air of amber.

Rick: Tinted orange.

 

Nose

Rob: A sharp cinnamon with a trace of sawdust.

Rick: light caramel aroma.

 

Palate

Rob: A combination of orange, cinnamon and licorice.

Rick: A sweet yet sharp finish with hints of summer fruits and cinnamon.

 

Water

Rob: Creates a smooth balance whilst retaining the lingering spice.

Rick: Enhances the flavour of the whisky leaving sweet aftertones.

 

Finish

Rob: A short finish. A good whisky for a winters evening.

Rick: A short finish. Suitable for someone looking to try something new.

 

From the distiller:

Clyde May defines ‘True Grit.’ Born to a single mother shortly before the Great Depression, Clyde was raised in a time and place that required a dose of resilience and character — traits that would become a hallmark of the man and his whiskey.

 

85 Proof. "The Original" is aged 6 to 7 years in oak barrels and finished with a hint of apple. Great over ice but a solid choice for mixing a cocktail.

What’s been happening in the Athletic Department?

 

Since adding her expertise to the group class time table, Janice has made the boxing class a fun but tough workout; focusing on skill, speed and muscles that you never knew you had. Covering all forms of technique this class is designed to push you to a level that you want, as well as letting out some of the built up frustration!

 

On the timetable we have:

Boxing Friday afternoon from 12:30, although we encourage Members to get here a little earlier to warm up so you can hit the ground running!

 

Why get involved in Boxing?

Boxing is an excellent way to improve your fitness. It helps with your coordination as well as building up a strong core.

It is also a great way to rid yourself of that unwanted stress.

 

Some myths you should not worry about:

1. I’m not Muhammad Ali.

You don’t need to be! All of our classes cater for everyone and every level of experience. With a strong emphasis on technique, we make sure to get the most out of you while making sure you leave feeling better both mentally and physically than when you arrived.

2. I’m not fit enough.

We cater for all fitness levels and types, you can float like a butterfly or choose to sting like a bee; either way we guarantee you a great workout.

3. I’m scared of getting hit.

Although we do partner based workouts there is no chance of you getting hit, we provide catch mits for you to use, as well as providing training techniques to make sure you don’t get hurt.

4. I don’t like fighting.

Boxing isn’t about fighting and is actually one of the most interactive and enjoyable forms of exercise to do on a social level. It’s a fun way to interact with class mates and assist each other in improving, building self-confidence and going harder; learning how to box correctly can also equip you with self-defence skills. Boxing isn’t about having to step into the ring, it’s about educating yourself in a fun environment, the skills learned along the way are a plus, not to mention the incredible shape you will be in having included it in your routine.

5. It’s bad for your brain.

Tips for Beginners:

1. Book a session with our personal trainers who are all punchfit qualified to work on technique and exercise.

2. Come and watch a class, boxing is on Friday afternoon from 12:30 so you can come and have a look if you still are undecided.

3. Buy the gear. If this is something you are going to commit to, we recommend buying a set of wraps and gloves- although we do provide all the equipment needed we do advise that you get your own pair of gloves that are fitted properly.

New York Marathon- an experience unlike any other

Member Naomi Tancred reports on her amazing Marathon effort.

 

Having done the New York Marathon two years ago I knew what I was up for. I however went into it with an expectation that I would run much faster having an extra two years of training under my belt.

 

Having trained for around 60-70km per week on the last occasion, I was convinced I needed to up the intensity and the kilometres and so I did. I maintained a base but started running around 100km per week for a period of 14 weeks which was intense and exhausting but I had only one number in my head that I wanted to achieve and that was a 3.15 marathon, having run 3.29 two years, that being my previous PB.

 

Travelling to New York solo without my husband and children was daunting. I left Sydney a bundle of nerves, travelling across with some running buddies and met up with Tatts members whilst there, namely Michael Dodd and Richard McGrath. The atmosphere in New York was amazing, everyone is so marathon focused which didn’t seem to help the nerves very much. I had five sleepless nights before the marathon ruminating about what may occur on the course. What if I can’t finish? What if I can’t run fast enough? What if I let everyone down?

 

Lots of doubt crept in but as soon as I arrived at the village on the Sunday I knew I was ready. I didn’t train this hard for nothing. I spent around two hours in the village waiting for the start as everyone had to be shuttled over to Staten Island before the race began. I had approximately five slices of bread and three bananas before the race began, sipping on water throughout and then it was time to start.

 

The American National Anthem was sung which sent goose bumps around my body and then the cannons fired and the race began. From the outset I felt euphoric. There is something to be said for a true taper (lots of pasta/rice and little running for a few weeks). Having gone out slightly too fast I backed myself and kept running at the pace hoping to maintain it. The crowds were amazing, everyone would call out your name (having your name on your t-shirt). This carried through the entire race until the finish line.

 

Having reached 30km unscathed and running up First Avenue my quads decided to send a signal they were not happy and they suddenly felt like two pieces of lead being transported along a conveyor belt but I was not giving up by any stretch of the imagination. I reached 35km with a slight drop in pace. The crowds around Central Park carried me through the last seven odd kilometres until the finish line was only 400 metres ahead. I have never sprinted so hard (it felt like a sprint, probably more a shuffle).

 

The tears flowed when I saw I had run 3.15:38. A 14 minute PB!! I was so proud of myself and realised that putting in the hard work pays off. Marathons are unpredictable and no matter how fit you are things can still fall apart on race day. The weather, the conditions and nutrition all play a part. The weather was a perfect 13 degrees with no wind. The conditions and crowd carried you through and the nutrition seemed to work although the body didn’t feel so great when taking that last step across the finish line.

 

The shuffle back to the New York Athletic Club took about one hour to cover the 1.5km and the champagne in the tap room went down a treat. A hot spa followed and then a night out drinking red wine and eating steak with Michael and Kylie Dodd, Richard McGrath and Michael’s family together with my running buddies was one of the best nights ever. We drank, we laughed and we told stories about our own experiences that day. We were all elated to finish the race. Michael, Kylie and Richard all had great races. Tattersalls brought us together.

 

The New York Marathon is a once in a lifetime opportunity and if you ever get the chance, grab it with both hands.

 

I just want to say thanks to all those closest to me for their support, mainly of course, Damian Tancred and also to Simon and Jack for massaging me (and poking me with needles) for the last however many weeks. Weekly massage is an indulgence and for a period there I felt like an elite athlete. A huge thanks to my coach, Peter Good (Athletics Easts).

 

As I was training for this marathon I thought there probably won’t be another for a while but now that I’ve finished Tokyo 2020 is sounding like a good idea! But now, it is time to relax, indulge and recover.

Let them eat bugs! November's dining specials are here

The last Queen of France; the initially popular Marie Antoinette eventually came to be disliked, accused of being profligate & promiscuous. In November, we introduce the 'Marie Antoinette'. This complex yet comforting cocktail is as decadent, disobedient and mischievous as its namesake.

 

The scandal, the decadence, the history, all pave the way to a complex cocktail that is artisanal, small batch and delightfully delicious.

 

The cocktails champion, Gin, didn't used to be so appealing. William Hogarth’s Gin Lane (four years before the birth of poor Marie Antoinette) depicted the evils of the consumption of gin. A lot has changed for the spirit leading the craft distilling movement.

November's Whisky of the Month - a great story from Shackleton Blended Malt

Colour:

Whilst Rob said “slightly damp straw (perhaps left outdoors in a Winter rain).” Craig thought “Light gold, like sunlight filtered through a stained glass window.”

 

Nose

“Stewed apples (with a tablespoon of brown sugar mildly caramelized)” said Rob. From Craig; “subtle hints of sweet caramel with a fruity frission.”

 

Palate

Rob: “Honey with a hint of petroleum.” Craig: “Light yet engaging, with a jolt of sweet and engaging fire that quickly fizzles out to leave a lingering feeling of warm and pleasant mediocrity.”

 

Water

Rob: “Did not impair nor detract from the palate.”

And finally, from Rob, “If this was a person, no-one would remember him or her after they left the room, but would enjoy talking to them at the time!”

 

From the distiller:

To bolster team spirit on his Antarctic expedition (Nimrod, 1907), Sir Ernest Shackleton personally ordered 25 cases of Mackinlay’s Rare Old Highland Malt Whisky.

 

In 2007, a century after the expedition, three cases of the perfectly preserved whisky were discovered, frozen into the ice beneath Shackleton’s base camp at Cape Royds. The whisky was excavated and flown to New Zealand where it was carefully thawed by the New Zealand Antarctic Heritage Trust in a purpose-built environment and public gallery at Canterbury Museum.

 

After its discovery frozen in the ice, world renowned Master Blender, Richard Paterson, carried out painstaking analysis to re-create this antique whisky, and used this as the foundation to create Shackleton – a modern Blended Malt with ice in its DNA.

Colour: A glowing amber.

Nose: Honey and dried fruit with hints of rye.

Water: Once water is added, it took the spice away, leaving a smooth and velvety blend.

Finish: Surprisingly sweet with slight undertones of vanilla and chocolate that leaves a long finish

Colour: A light bronze.

Nose: A mixture of syrup and fruit make up a warm aroma that is not too overwhelming.

Palate: On the palate it was quite smoky with a hint of distinctive spice.

Water: The inclusion of water opens the flavours and seems to enhance the warmth and fruity tastes that were prevalent prior.

Finish: I found a warm finish and enjoyable blend; however on conclusion the only palate that matters is your own.

An Asian twist for your October specials

Release your inner 'chee' this spring!

 

The lychee fruit has an illustrious history that dates back almost a thousand years, and this delectably juicy fruit has long been considered a symbol of both royalty and love in ancient China. For the month of October, Mario has executed a drink to reflect this heritage, the Lychee Martini. This cocktail needs no posh twist nor any addition of bittersweet notes from other fruits; we simply use the classic combination of vodka, Paraiso and fresh lychee juice to make the perfect 'instagrammable' cocktail.

 

This is the utter drool-worthy accompaniment to our $1 dumplings.

 

$1 dumplings are your new doughy delights!

 

The English fancy themselves the kings of dumplings, proud lordlings of a doughy fiefdom. The Suffolk Spartans favour a yeast-free version; in Derbyshire, they add oatmeal, and Dorset dumplings are sometimes known as "doughboys", conceivably because they float in the stock like the buoys around the coast. The word 'dumplings' emerged in the early 1600s but, of course, a name must already have existed for a lump of dough cooked in stock or stew, a recipe that's surely been around as long as bread.

 

So here at the Club, we thought we'd follow the Norfolks and offer you dumplings - bread dough thrown into a simmering pot: half-boiling and half-steaming, they expand into a slippery and comforting chew.

 

Enjoy your dumplings for lunch Monday to Friday and Dinner Wednesday to Friday during the month of October, to coincide with the Good Food Month’s Night Noodle Markets over in Hyde Park, all in the comfort of your Members Bar.

September's Whisky of the Month - Dobson's Old Reliable

Members Alex and Sean Obern review this month's Whisky: Dobson's Old Reliable Triple Distilled Whisky.

 

“An Australian whisky with Highlands inspiration, I was first stricken by the alcohol in the nose and my amateur whisky tasting abilities, (at 47% don’t take a straight whiff!). I noticed the colour of warm amber with a sweet floral nose and hints of strawberry. Upon tasting I first noticed the light smokey flavour typical of a Highlands whisky but upon the finish found some sweet chocolate notes with a medium finish. After adding a drop of water, the chocolate became stronger with almost a hint of liquorice and the finish became significantly shorter.”

“Old Dobson's was a treat with a light caramel taste and a light smokey aftertaste. A little bit of water further enhanced the sweetness. We were both surprised when the bottle was revealed to be from NSW. Great drop!"

From the distiller:

Old Reliable is a lighter style triple distilled whisky. At 40% abv it is very lightly peated and aged over French shiraz oak, a very approachable and smooth whisky. This style is easy drinking neat or on the rocks. It is made in small batches and is released every six months or when the gods of oak determine that the required balance of smoothness and flavour has been achieved. Grains used are 'golden promise' and 'bairds peated' malt barley.

Schnitzel - Genug Gesagt

Are the Chefs at Tattersalls harbouring a ‘geheim’ to their delicious monthly specials? We can assure you, they are no secret keepers; our Chef’s simply cook Australian seasonal and local produce with love.

 

The result of this love is schnitzel, one of those dishes that is mysteriously more than the sum of it's parts. Schnitzel can, of course, be made from any meat large enough to crumb, but for the month of September we have decided to serve a whopper 250 gram chicken schnitzel with chips and salad.

 

Because sometimes schnitzel, chips and salad doesn’t quite make a meal complete, we have topped it off by matching it with our beer of the month! Devour this month's special with a complimentary beer from Sydney Beer Co for only $20.

Whisky of the Month for August - Bowmore 12 yo Single Malt

Members David and Tim Baynham review this month's Whisky: Bowmore 12 year old Single Malt.

 

This is a classic, approachable expression of Islay whisky. It is not overly complex, but there is a lot to maintain interest from nose to finish. Balance is the word.

 

Colour:A lovely honey, verging on amber

 

Nose:In classic Islay fashion, peat comes first, but it is a lighter smoke level than many from Islay, already giving hints of a more approachable palate. There is also an oceanic element, with some saltiness coming through, some firewood, and hints of citrus.

 

Palate:This is where the enjoyable level of balance in this scotch really comes to the fore. Light smoke and peat continue on to the palate, with greater levels of citrus, and a new sweet note balancing things out.

 

Finish:The sweet note evolves into a cocoa, chocolatey element, with the peat evolving to an oiliness that smoothed out the finish alongside some heat.

Chefs Nathan and Danny have created the beef & ale pie. Enjoy a flavoursome wintery stew of beef and Hop House 13 ale inside a delicious pastry crust, with a side of fries and salad. Whisky's a Go Go - Tattersalls Whisky Club 2018/19

The continued success of the Whisky Club format means we are now entering our 5th year and with it will come our 50th whisky, so to celebrate that, we are keeping the annual Membership price at $50.

 

The aim of the Whisky Club is to bring you an eclectic selection of whiskies throughout the year - perhaps some you’d love to try, but would never think to buy a bottle of.

 

Whisky Club Membership entitles you to:

- A complimentary dram of each of the 10 whiskies throughout the year.

- A special price of $5 per dram thereafter for the year.

- The ability to invite guests to try the Whisky Club’s whisky for $10 a dram for the year.

- Invitations to whisky evenings during the year.

 

Once you sign up to the Whisky Club, we will keep a special Membership card behind the bar for you, and you are welcome to come and enjoy each whisky at your own convenience until the end of the Whisky Club year being 30th June 2019.

"At first glance the whisky looks golden, like a syrup you would put on your pancakes. It offers a nose that opens butterscotch and a hint of raisin. The palate is smooth and subtle with hints of vanilla sweetness. The mid palate has a long heavenly aftertaste that will leave you with a delightful lingering buttery taste."

Train for City2Surf with Tattersalls Run Club

Whether you are just out for a leisurely stroll or trying to run your best time, here are a few tips for the City2Surf from our own marathon man, Damian Tancred:

 

There are a few nasty hills along the way...

Don’t get confused with the first hill of the day, from Rushcutters Bay to Edgecliff train station. This is definitely not Heartbreak Hill.

At the end of Rose Bay shops (which is the 6km mark) is where the fun begins.

When you get to Bondi don’t lose pace, you still have a long stretch of 2km up Campbell Parade to the finish line.

 

The Week Before -

try to keep your diet much the same, just include a little more carbohydrates.

 

Morning of the Race -

have a light breakfast, e.g. Toast with banana and a bottle of water. No need for sports drinks.

Some people like to have a coffee before a race, only do this if it’s part of your normal routine.

If you are going to take sports drinks or sports gels, be sure that you have trained with them before.

Don’t try anything new on the day. Drink plenty of fluids along the way.

It's hard to believe we are almost half way through the year!

 

Young Members have hosted a variety of events so far; including drinks in the Members Bar, Champagne and Cheese tasting and Bootcamp and Breakfast. The next two Young Member events are fast approaching.

Jim has been in and around the strategic management of banking and finance in Australia and offshore for over 40 years, during which time he’s observed and participated in some major developments, seeing first-hand the best and worst of management and enjoyed making the same mistake over and over again.

Jim will reflect, in his unique way, on his perspectives on the important drivers of big organisations, understanding how to cope with executive management as you build your career and learning how to respond when some things go “pear shaped” - as they inevitably will!

The gold at the 2018 Australian International Beer Awards is a long way from the start of the story. Since start-up in 1999 in Paul and Natasha Holgate’s back-yard, Holgate Brewhouse brewing company has been producing genuine craft beer from the village of Woodend in Victoria.

 

Both founders have a science and chemistry background working for multinational corporate companies before giving it all up to start their own family business.

BRRR: A remedy for all Winter ills

It's getting chilly out there, but we've got some comfort on offer in the Members Bar and Dining room. As the temperature begins to drop, there's nothing more welcoming than a big hearty dish of lamb shanks to warm the soul.
