Penley Phoenix Cabernet Sauvignon Coonawarra 2021 is a vibrant expression of one of Australia’s most celebrated red wine regions.
From the famed red soils of Coonawarra in South Australia, this 2021 vintage reflects the character of the region’s distinctive terra rossa, a narrow ribbon of iron-rich red clay over limestone that allows Cabernet Sauvignon to achieve both ripeness and refinement. The result is a wine that balances generous fruit with freshness and structure, hallmarks of great Coonawarra Cabernet.
Penley Estate’s heritage is closely linked to the renowned Tolley and Penfold winemaking families, with vineyards established to honour both regional integrity and a deep commitment to quality. The name “Phoenix” carries special historical significance, tracing back to an early family enterprise that became foundational to their enduring winemaking story.
The 2021 vintage matured on skins before spending approximately 12 months in a combination of seasoned and new French oak, alongside stainless steel. This careful maturation has produced a Cabernet that is modern, vibrant and fruit-driven. Bright notes of blackberry and plum are layered with subtle hints of herb and spice, supported by finely integrated oak and polished tannins.
On the palate, the wine is medium-bodied and beautifully balanced, offering juicy dark fruit framed by elegant structure. The finish is lively and lingering, making it enjoyable now while offering the potential to develop gracefully over the coming years.
This Cabernet Sauvignon pairs superbly with steak frites, Chateaubriand or a well-curated cheese board, each complementing the wine’s depth and echoing its earthy, fruit-driven character.
