Employee of the Year: Fernando Casanova

Over the past year, Head Chef Fernando has continued to demonstrate the qualities that made him our 2022 Employee of the Year, elevating both our events program and everyday dining experience to new heights.

Fernando’s proactive and creative approach has been instrumental in the success of our expanded events calendar. From crafting the menus for our new seasonal Long Lunches to supporting the execution of member favourites like the Crabshack Louisiana-style dinner and Lobster Lunch, his culinary imagination and attention to detail have consistently impressed members and colleagues alike.

While Fernando may be the front man in the kitchen, his true strength lies in his leadership and the trust he places in his team. Working closely with his tight-knit group of long-time staff, Leo, Andrea, and Nicoli, Fernando has fostered a collaborative environment where standards are raised collectively. Together, this dedicated team has pulled off some incredible dishes, with Fernando guiding and empowering each member to contribute their expertise and creativity to the Club’s culinary success.

Beyond the special events, Fernando has improved the quality of our overall food offering, supported his team, and maintained the high standards that Tattersalls members expect.

His ability to remain responsive to member feedback while pushing creative boundaries has strengthened the Club’s culinary reputation.

Fernando’s leadership exemplifies the values of Tattersalls Club – excellence, dedication, and a genuine commitment to member satisfaction.

Employee of the Quarter: Mario Della Corte

As the year drew to a close, the team voted Mario Della Corte as Employee of the Quarter for the final quarter of 2025. The recognition was well-deserved, with members highlighting his professionalism, the genuine care he brings to his work, and the high standards he maintains in both Club presentation and service.

As one member noted, Mario “works with heart, not just energy”—a sentiment that captures his approach to making every member feel valued and every interaction meaningful. His dedication has made him a beloved figure among members and a valued member of the Tattersalls team.
