Off the menu, behind locked doors resides a guarded selection of wines, for this week Mario & Esmond are pouring this week’s featured wine – the 2018 Fetherston Magnolia Garganega & Gewürztraminer. Fetherston Vintners is run by Chris Lawrence, a former top chef with a serious commitment to flavour.
Fetherston Vintners is run by Chris Lawrence, a former top chef with a serious commitment to flavour, and Camille Koll, who earned her stripes working for Domaine Chandon. Together, their hard-earned knowledge of grape varietals and flavour profiles combines to create something really rather special. Gewürztramineris is pressed straight to older French oak barriques. Fermented wild with regular batonnage, followed by five months maturation.
This grape has a natural sweetness and most wines are made in the off-dry style. In combination with high alcohol and typical aromas of lemon balm & flowers, this wine is intensely perfumed. Some people describe it as a more ‘mature’ aromatic wine because it is slightly heavier and less zippy. And it pairs very well with many different types of foods, including spicy dishes.
This Fetherston Magnolia comprises of 67% Garganega & 33% Gewürzt, with low tannins which are perfect to be paired with our featured dish – Chargrilled Octopus with spicy Nduja and pine nuts, because the sweetness in the wine will coat the palate and make the heat in the food less obvious. In fact, ‘Gewürz’ in German means ‘spice’ or ‘condiment’.
