Professor Milgate has ventured into the depths of his cellar to find a range of Brokenhood wines. The minimum age of the wine is 10 years (2014 vintage) with some going back 24 or more years (if the corks have held out). The 2 vintages of Graveyard Shiraz will be at least 20 years of age.
To pair with Mr Milgate’s wine, our Chef Fernando Casanova, has curated a menu focusing on local and seasonal produce, with synergy flowing between plate and glass.
1st Course ILR Semillon (Hunter Valley)

2nd Course IV-BC76 Chardonnay (Beechworth)
Pairing with Spanner crab spaghetti, white wine and fermented butter sauce
3rd Course Shiraz part 1 (McLaren Vale) Wade Block 2 & Rayner Vineyard
Pairing with Lamb backstrap, Jerusalem artichoke puree, glazed shallot
4th Course Shiraz part 5 (Hunter Valley) Mistress Block & Graveyard
Pairing with Beef tenderloin, baked potato terrine, Bleu d’ Auvergne sauce
5th Course Riesling Vineyard Selection Jelka & Sémillon Chardonnay Sauvignon Blanc Umpire’s Vineyard Cowra
Pairing with Chocolate tart, wattle seed cream
